When the livin's easy!!!! That is one of my FAVORITE summer songs!

Summer is a time for BBQ's, family outings and gatherings. Endless beach days and fun with friends are aways a must!! While this is fun,this can also mean tough food and drink choices! I have found that if you PLAN ahead of time what you will eat, then you will be much more likely to stay on track. If you know you are heading to a specific restaurant, visit their website to plan your meal and view the nutritional information AHEAD of time! If you are heading to a cook out offer to bring something and make it healthy but still appealing and fun for everyone! Caprese skewers are always a BIG hit and they are also super cute! Marinate some chicken to throw on the grill alongside other offerings and bring along a healthy quinoa and black bean salad!

When igt comes time for adult beverages, instead of going for those fruity, sugar filled summer drinks, reach for a fruit spritzer with vodka or rum and flavored soda water. In place of a full calorie beer try out the light version. Corona light, with lime and Miller light  (believe it or not with Lemon) are both good flavored beers with almost half the calories as a Sam Summer! 

Keep active at your outings! If you have the option take advantage of swimming, playing basketball, volleyball or even badminton whatever is around! It's not only the kids who benefit from playing!

All in all enjoy your summer but DON'T let all your hard work go down the drain with one cook out! With a little time and planning you can hang on to all of your  fitness success and STILL have a great time!!! Check out my recipes for these ideas below!!!! Of course you can always have a Lean Body Meal Replacement packet in your bag with a shaker cup as well! :) But here are some easy meal ideas for your summer cookouts!


6-8 Wooden Skewers

24 Mini Mozzarella Balls

24 Red Grape Tomatoes

24 Yellow Grape Tomatoes

Fresh Basil

2 cups Balsamic Vinegar

1/2 cup Brown Sugar

-Cut mozzarella in halves

-Wash tomatoes and basil

-Cut large basil leafs into 4's

Starting with tomatoes alternate cheese, basil and tomatoes until stick is 1/2 full. leave room at the top for the stick to show thru and at the bottom for it to be held.

In a sauce pan reduce 2 cups Balsamic Vinegar and 1/2C brown sugar by bringing the 2 ingredients to a boil and then reducing to a simmer for about 20 minutes. Glaze should coat a spoon nicely when it is done. Arrange skewers on a bed of fresh romaine and drizzle the glaze over the top. Olives can be used as a garnish as well as parsley.


1 Box of  NORTH EAST Rosemary Quinoa Mix (or your personal favorite)

1 Large Red Onion Chopped

1 Can Black Beans

2 Large Diced Tomatoes

1 Yellow Pepper Diced

1 Green Pepper Diced

1 TBL diced garlic

1-2 tsp Sea Salt

1 tsp Pepper

2 tsp Cayenne Olive Oil

Prepare your quinoa as directed on box, let chill. Dice up all your veggies and mix together with olive oil, about 2 TBL, coat thoroughly. Add 1/2tsp sea salt and garlic to the mix and toss again. Stir in 1 can black beans (Rinse them off in collander first) add cayenne, salt, pepper and quinoa. MIX THOROUGHLY and let chill 2 hours or over night. Serve cold on a bed of fresh baby greens or fresh spinach drizzle final presentation with a little more olive oil. Add and a sprig or 2 of fresh rosemary for a fun garnish!



3-4LB Chicken Tenderloins

2 Fresh Lemons

5-6 Fresh Basil Leaves

1 TBL diced Garlic

Olive Oil

1 Cup Orange Shandy



In large bowl squeeze the juice from 2 lemons. Add chicken to bowl and drizzle olive oil to coat, mix all together. Add salt, pepper, garlic and Orange Shandy and mix again. Zest 1/2 of one of the lemons and chop basil into small pieces, add to the chicken mix thoroughly. This gives all the ingredientd a chance to coat all of the chicken. Take remaining lemon pieces and put in bowl with chicken. Let marinate at least 2 hours, overnight is best! Grill and serve with your Caprese Skewers and Quinoa and Black Bean Salad!

For a fun diping sauce combine the following ingredients and chill

1/2 Cup Plain Greek Yogurt

2TBL Mayonaisse

2 TBL lemon juice


1/2 tsp cayenne

1TBL garlic powder

This is great for your chicken or even for veggies!


Vodka Berry Spritzer

Fill glass with Ice

2 OZ Raspberry Vodka

Top with Blackberry Soda Water

Garnish with a lime and add a splash of cranberry juice for color


Coconut Rum Spritzer

Fill glass with ice

1 oz Coconut Rum

1 oz Pineapple Rum

Top with Pineaple Soda Water

Garnish with a fresh piece of pineapple, lime and a cherry on a toothpick and add a splash of cranberry juice for color
