Posted by Melissa Wheeler on

Got a craving for something sweet but don't want to blow your calories and macro count??? Try this recipe for an old time classic! Perfect on a cold winter day with a hot cup of coffee or tea!!! I have been playing with recipes for awhile now. It is never easy when you are baking and trying to be healthy all while trying to get as much protein as you can into each item. Since my daughter has become a vegetarian I need to find alternative ways to keep her protein in take up. She is still a growing girl after all and cookies are always a welcome snack! Here is the recipe for my Oatmeal Raisin Protein Cookies!

Oatmeal Raisin Cookies

1C Quick Oats

1C Sweetened Applesauce

1 med banana smashed

1C Raisins

4 Scoops NOW Pea Protein

1/4C LIGHT Maple Syrup (Check out KNOW FOODS syrup - available in store @ Sage Nutriton)

1 whole egg

3 egg whites

1TBL coconut oil (softened)

1TBL Cinnamon

2tsp Ginger

1tsp salt

1tsp Vanilla

Combine all ingredients in bowl. If too thick add water 2TBL at a time until you reach a cookie dough consistency. Spoon onto greased cookie sheet and bake at 375 degrees for 8-11 minutes. Turn cookie sheet 1/2 way thru and use mason jar to flatten cookies down and sprinkle top with cinnamon. Recipe makes 20 cookies. Cookies will stay fresh in an air tight container about 1 week IF they aren't gobbled up sooner!

***Can sub vanilla protein in place of pea protein but you should cut the maple syrup in half to avoid it being overly sweet***
