CHERRY PIE PANCAKES!!!

Our friend at MAGNUM shared this great recipe with us! Now remember they are in Canada and so I have included some revisions on measurements and subs for ingredients not found here! Now that ihoP is ihoB we are going to need more recipes like this!!!!
Cherry Pie Quattro Pancake Recipe
 
Here is what you will need:
  • 75 mL (2.5 oz) pumpkin puree
  • 75 mL (2.5 oz) Greek Yogurt (2%)
  • 100 mL egg whites (Liquid Muscle-Strawberry flavor- Sub 3.5 oz regular egg whites and no sugar added strawberry syrup or strawberry extract to taste aprx 1 TBL)
  • a dash of vanilla extract (2 tsp)
  • 30 g (1.05 oz) oat flour
  • 10 g (0.35 oz) coconut flour
  • 1/2 tsp Baking Powder
  • A squirt of lemon juice (1 tsp)
  • Vanilla Quattro Protein Powder
  • Liquid Stevia
Toppings:
  • Banana
  • No sugar added Cherry Pie Filling 
  • 1 Fresh Cherry
  • Maraschino Cherries
  • Light Whipped Cream (optional)
  • Graham Cracker crumbs (optional)
Instructions:
  1. Mix wet pancake ingredients and stir in dry pancake ingredients
  2. Cook on a hot greased pan or griddle at 375 degrees Fahrenheit for about 3-4 minutes, then flip and cook for another 1-2 minutes until done
  3. For the vanilla “icing” or “protein fluff”, mix 1 scoop of Vanilla Quattro with 80-100g (2.8-4 oz) greek yogurt and a couple of drops of stevia (or 1 TBL powdered stevia)
  4. Layer each pancake with the vanilla icing and banana slices, top with cherry pie filling, whipped cream and whatever else you’d like
